Vegan Banana Muffins

Ingredients:
Dry:
200 g wholemeal farro (zea) flour or regular wholewheat flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
2 tsp cinnamon

Wet:
380 g banana, mashed with a fork
140 g maple syrup
110 g almond milk, or other plantbased milk of choice
1 tb vanilla extract
1 tsp apple cider vinegar

To top:
Banana, thinly sliced
Cinnamon


Instructions:
1. Preheat oven to 170 °C.
2. Add all dry ingredients to a medium bowl and whisk to combine.
3. Add all wet ingredients to a large bowl and whisk to combine.
4. Fold the dry mixture into the wet with a spatula until just combined.
5. Spoon batter into a non-stick silicone muffin baking pan.
6. Top each muffin with a thin banana slice and sprinkle with cinnamon.
7. Bake for 25 minutes, or until a toothpick inserted into the centre comes out clean.
8. Allow to cool before removing from the muffin pan.
